Default Animate with Dynamics

There is a scene in my 1 min animation movie where a mouse (character) snatches a cheese (cheese is too a character having hands legs and face) from a mouse trap and the mouse takes that cheese in his hands and jumps from the table. This all process requires the anticipation and falloff for my cheese character (which is in the hand of mouse) and I want to cover it through dynamics.
So please let me know how do I do it...

you cannot use anticipation from dynamics!
